Maybe not, but I feel like this is a mexican inspired lunch.
A defrosted leftover vegan blackbean burger (which I believe is from this recipe– taste is great, but they do crumble quite a bit) on Sprouted grain Ezekiel bread with some romaine and black bean and corn salsa. With a side salad of spinach topped with shredded carrots, corn and a heaping spoonful of black bean and corn salsa.
This really hit the spot. I originally was going to re-heat last night’s dinner, but I really wanted bread so I went to my go-to meal. I really feel like I eat this pretty often, either a black bean burger salad or sandwich with a side salad. It’s quick and easy and super flavorful.
