Pancake Truffles

I had seen this recipe on Healthy Tipping Point a few times and decided it was finally time to make them for myself.

Healthy Tipping Point Pancake Truffles

Ingredients:

    • 1/2 cup raw oatmeal
    • 1/3 cup whole wheat pancake mix
    • 1 egg white
    • 1/4 tablespoon cinnamon
    • 1/4 cup almond milk
    • 4.5 inches of banana (cut into three 1.5 inch pieces)
    • 1/4 cup walnut pieces *
    • Maple syrup to taste

*Original recipe called for pecans, which I didn’t have.

Preheat oven to 350 degrees.

Combine oats, pancake mix, cinnamon, egg white and almond milk in a small mixing bowl.

Separate mix into 3 parts (about 1/4 cup).  Spread walnuts on a small plate.

Then take the banana and cut it into three 1.5 inch pieces.  Feel free to eat any leftover pieces.

Take the banana pieces and coat them in each of the sections of mix then roll in walnuts and place on a greased cookie sheet.  Repeat with all three pieces.  It will be wet and messy and sticky… But hang in there, it’s worth it!

Place in the oven and bake for 15 minutes.

Once it’s done cooking take them out and immediately put them on a plate, drizzle with maple syrup and enjoy!

It. Was. So. Good! I highly suggest making this for yourself.  STAT.  And it was VERY filling, don’t let the 1.5 inch banana pieces throw you off.  I am SO full!

And it was the perfect breakfast to start my day off!  Today is going to be spent putting up our Christmas decorations, getting a Christmas tree, stringing popcorn and cranberries then decorating the tree.  ALSO, the $88 Garmin I scored on Amazon.com on black friday should be showing up today at some point so a run will most definitely be happening.  It’s going to be a good day.
